3 easy thanksgiving pumpkin recipes

If you're like me, you greet the holiday season with mixed emotions. On one hand, I love the hustle and bustle of family, friends, and other festivities. 

BUT... (and that's a big but) I have a hard enough time getting supper on the table sans-holiday with kids heading in three different directions, an interior design firm to run, and a dog that likes to sleep in the *middle* of my kitchen. With the holidays about to begin, I'm supposed to cook and bake in double-time, and smile about it!

(Okay, I'm not a total Scrooge. I'm just a busy mom like the rest of you!)

Thankfully, I have three easy recipes that I fall back on when I don't know what else to bring for a family gathering--and have no time whatsoever. The best part about these recipes is that they look like they took forever to make. (When really, I made them around 10:30 PM the night before while watching reruns of Flip This House.)


Ingredients
1 can (29 oz) pure pumpkin (not pumpkin pie filling)
1 can (12 oz) evaporated milk
3 whole eggs
1 cup white sugar
3 teaspoons cinnamon
1 (18.25 ounce) Betty Crocker™ SuperMoist™ yellow cake mix
1 cup chopped pecans (optional)
3/4 cup butter, melted

Recipe #2: Pumpkin Flan

Ingredients

2¼ c. sugar
8 large eggs
2 can evaporated milk (not sweetened condensed milk)
1 c. canned 100% pure pumpkin
2 tsp. vanilla extract
1½ tsp. pumpkin pie spice
¼ tsp. salt
Garnish: candy pumpkins

Ingredients


2 tablespoons canned pumpkin
1/2 teaspoon pumpkin pie spice, plus more to garnish
Freshly ground black pepper
2 tablespoons sugar
2 tablespoons pure vanilla extract
2 cups whole milk
1 to 2 shots espresso, about 1/4 cup
1/4 cup heavy cream, whipped until firm peaks form
